and “born” in French.
In the rice fields of Shibata, Niigata, a retreat that opens for a single group each day.
Gently loosening the idea of “season”,
we weave the wisdom and culture rooted in this land
with its ingredients, into a new deliciousness.
Within a vessel built of earth and wood alone,
the season of Niigata — caught that very day — is served as a thirteen-course menu.
One night here becomes a new “root” reaching toward the future.

Chef Makoto Fuse, trained under three-Michelin-star Antoine Westermann, unfolds wild vegetables, river fish, seasonal game and the gifts of the sea, one plate at a time.
Composed only of Niigata produce and sake from nearby breweries — a menu beyond the seasons, one that could exist only on that day.

Né was born within the grounds of the Honma family,
who once cultivated and long protected this land.
As the richness of nature fades from the countryside, we wish to convey the beauty unique to this place through cuisine and architecture.
Even in an age of overflowing information, eating cannot be made digital. To go, to be present, to touch with all five senses — there, a moving experience resides.
